I totally made you the easiest breakfast/snack food ever.
Combining two of my favourite things: oat bars and peanut butter!!
Yeah, I know I have about 50 bazillion favourite things. But grab and go breakfasts will always top the list. As I am sure it does for many of you who are almost too busy for breakfast.
These bars are just as easy to make as they are to eat. Just mix it all up in one bowl, dump it into a large baking pan, cut into squares and bam. Breakfast and snacks for days.
Or like, two days in my two person household. Where I snack wayytoo often, and my other half loves oat bars more than any other thing I make.
I know, right? What a weirdo.
But I can’t really argue about these bars. They have just the right amount of chew, just the right amount of sweetness.. and don’t get me STARTED on peanut butter! This is my alternative to scooping peanut butter straight from the jar and shoving it in my mouth.
And MUCH better than those flavourless, overpriced oat bars from Starbucks. Don’t get me wrong, I love that place. I go there at LEAST twice a week, and have had basically everythingon their menu at least once, but I just can’t stand their oat bars.
So from now on, I think I will be bringing in some of these bars when I go to my local coffee shop to buy a drink. Too bad I can’t bring these to school. I will need to try to perfect a peanut butterless version soon. Or, just save these for when I am home.

Peanut Butter Oat Bars
Oat Bars that are packed with peanut butter for some extra protein. Perfect grab and go breakfast, or snack.

Ingredients
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup creamy peanut butter
- 1/2 cup salted butter, softened
- 1 large egg
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1 cup rolled oats
Instructions
Preheat the oven to 350°F. Lightly grease a 9×13 baking dish and set aside.
In a large bowl, cream together the sugars, peanut butter and butter until light and fluffy. Add in the egg and beat together.
Add in the flour, baking soda and oats, and mix until fully combined.
Press the mixture into the prepared baking dish. Bake in the preheated oven for 15 minutes.
Remove from oven, and allow to cool in the pan. Cut into bars.

Your Peanut Butter Oat Bars look delicious. Here the peanut butter is used in salty dishes, rarely in cakes. That said, I like your recipe. Have a lovely Sunday 🙂

OMG I Loved these, so easy to make taste so good. I ate the whole pan in 3 days and that was holding back…I could have eaten them in 1 day. My husband liked them too, great for on the go breakfast. I will make these weekly.

I have been looking for simple and tasty bar recipes that I can make for my 3 little boys, without all the unnecessary ingredients that the store bought ones have, so I found your recipe and made these today! I’ve found a new favourite – thank you! I had some leftover cereal crumbs that I threw in at the last minute, and what a great way to use those up. I really like having an oatmeal bar as a snack, and the peanut butter gives them that little boost of protein that staves off the mid-morning hungries.Reply
