Pancakes are always a crowd favorite. Cooking on the large flat top griddle allows me to cook them all at once. We have a large family and it is nice to be able to enjoy breakfast together.

Why This Recipe Works
Cooking pancakes is one of my favorite breakfast items to make on the Blackstone Griddle. They cook quickly and are easy to prepare. Blackstone Griddle Pancakes can easily be made with a variety of add-ins, but juicy raspberries are one of our favorites.
The pancakes cook with a crispy texture with a soft center.

Substitutions and Additions
- Change the Fruit – If you want you can easily change the fruit in this recipe. Add blueberries to make blueberry pancakes.
- Chocolate Chips – Add chocolate to the batter for delicious chocolate flavor. Chocolate chips pairs perfectly with the raspberry.
- Cinnamon – Sprinkle in some cinnamon for delicious warm flavors.
How to Make Raspberry Pancakes
- Step 1 – Heat Griddle – Preheat the Blackstone grill over low heat (approximately 300-350 degrees F).
Step 2 – Combine dry ingredients – In a large mixing bowl, whisk together the flour, sugar, baking powder. You can also add in baking soda and salt.
Step 3 – Melt Butter – Then in a separate bowl, melt 3 Tablespoons of the butter. Allow it to cool to room temperature. Then mix in the eggs, milk and vanilla extract.
Step 3 – Mix dry and wet ingredients – Gradually add the wet ingredients to the dry ingredients. Mix until just combined being careful to not over mix the batter. It’s ok if there are lumps in the batter.
Step 4 – Stir in Fresh Raspberries – Then stir in the raspberries with a spatula or wooden spoon. The raspberries with break down and incorporate into the batter. Let the batter rest for 5 minutes.
Step 5 – Add butter to griddle – Spread the remaining butter onto the Blackstone grill where you will be cooking the pancakes.
Step 6 – Pour Batter on Griddle – Pour approximately ⅓ cup of the batter onto the hot Blackstone grill.
- Step 7 – Continue to Cook – Continue to pour pancakes onto the griddle. Spacing them a few inches apart until all the batter is used. Cook the pancakes for 1-2 minutes until bubbles start to appear on the top and the edges are set.
- Step 8 – Flip Pancakes – Use a metal spatula to flip the pancakes. Cook the opposite side until it’s golden brown (1-2 more minutes). Do not press done on the pancakes and do not flip the pancakes multiple times.
- Step 9 – Serve and Enjoy – Then serve the pancakes warm topped with butter. Add your favorite syrup or any of your other favorite pancake toppings! Enjoy!
Recipe Tips
- Mixing Ingredients – Make sure to not over mix the pancake batter in a large bowl. Mix just until the wet and dry ingredients are combined.
- Melted Butter – Make sure that the melted butter has cooled to room temperature. So that it does not cook the eggs once they are mixed into the butter.
- Cooking Pancakes – If you need to you can work in batches until all the pancakes are cooked. This might be helpful when cooking on the stovetop or electric griddle.
- Preheat Griddle – Make sure to preheat griddle before cooking. We recommend adding melted butter or vegetable oil before pouring batter.
- Frozen Raspberries – If you want to use frozen raspberries, we recommend thawing them before mixing with the other ingredients.

Can I Make Raspberry Pancakes on Stovetop?
Yes, you can easily making this recipe on your stove top. We like cooking in a cast iron skillet or any regular pans will work. Pour the prepared batter in a skillet over medium heat and cook until the bubbles form on top. Once cooked on both sides, serve and enjoy.
How to Store Leftovers
Refrigerate the leftover pancakes in an airtight container. They will stay fresh in the fridge for up to 5 days. You can freeze the pancakes for up to 3 months.

- 2 cups All Purpose Flour
